our r&d team set out to create a fun and spooky drink for the halloween season. they are a creative bunch and they really surprise us with their creativity and the handmade things they make from scratch.


in autumn, chestnuts are in season. we take chestnuts, blend them with fresh milk and add in a little canadian maple syrup to add some sweetness.


next, we take 20g of our big short blend with 50/50% el indo from columbia and fazenda santa ines from brazil and calibrate our machine to extract a nice espresso with a 1:2 ratio. then we create a spiced cream by roasting japanese pumpkin until it's nicely caramelised, and blend it together with a little allspice and fresh cream. this creates a smooth texture, nice pumpkin flavour and deep orange colour.


we grab some cane sugar, cook a caramel to 180 degrees and spin it to create a "spider web" cloud.


to finish the drink, we take some callebaut 70% cocoa dark chocolate, temper it to 51 degrees, then reduce the temperature to 31 degrees and hand pipe a chocolate spider.
